Teriyaki Turkey + Coconut Rice Bowls 🍚 We have been making this gluten free + healthier/leaner teriyaki recipe for years but I recently perfected the coconut rice with it and it’s been my favorite dinner lately (+ tastes even better leftover!) * 1/2 cup Coconut Aminos (soy sauce
substitute) * 1/4 cup water * 2 tablespoons Rice Wine Vinegar * 1 tablespoons brown sugar * 1 tablespoons granulated sugar * 2 teaspoons minced garlic * 1 teaspoon ground ginger * 1 teaspoon sesame oil * 1 tablespoon cornstarch * 2 tablespoons warm water Mix coconut aminos, water, rice wine vinegar, brown sugar, garlic, ginger, sesame oil on medium heat until sugar dissolves. Then mix 2 tablespoons of water and cornstarch and slowly pour it into the mixture and stir until it thickens and set it aside. Heat oil in a separate pan and brown 1/2 a white onion for 3-4 minutes. Add ground turkey and garlic. Once fully cooked, add the sauce and top with sesame seeds & green onion. Coconut rice: Rinse 2 cups of coconut rice over and over until the water is as clear as you can get it. It will never be fully clear but I rinse about 4x! Then let the rice soak in water for 30 minutes-1 hour (this is crucial for fluffy coconut rice!) Drain water and add rice to a pot with 1 tablespoon of sugar, salt, a can of coconut milk + 3/4 cup water (mixing the coconut milk w water is also crucial!) Bring to a boil and then cover & turn heat to low. In about 15 mins you’ll have perfect fluffy coconut rice 🤌🏼
