Today I’ve rustled up a juicy sweet pepper stuffed with mushroom and onion cous cous topped with superseeds and served with crispy baked broccoli and a cup of camomile tea. Did you know cous cous is rich in selenium which assists in reducing the risk of cancer, is a good source of plant based protein and also helps to boost the immune system. I typically stuff my veggies with either rice or cous cous and sway between sweet red pesto and tomato based sauces or rich green peppers, fresh mint, garlic and dried herbs. It’s not only fun to experiment with different colours, flavours and textures but also a vital part of consuming a balanced diet and hitting your micros and macros for optimum nutrition. Good health starts from within! I take a lot of my inspiration from Indian and Mediterranean dishes that I’ve had whilst travelling - I can’t wait for lockdown to end to be able to experience such incredible flavours from around the world first hand.
