Cashew harvest! Have you ever seen cashews grow? And have you ever had cashew fruit? One of my all-time favorite fruits (called marañon in South America) - super high in vitamin c and magnesium and has tons of fiber but sort of sucks all the saliva out of your mouth so it’s not for everyone😝 We harvested these from @sgtpeppersfriends garden yesterday. I’m going to dry and roast the cashews (they are actually poisonous raw so never eat them off the fruit!) and make a cashew fruit jam with these babies💛 all the rain we have had lately has made everything blossom over here and we have an abundance of fruits and veggies right now! We just planted new seedlings today and go into a new cycle of tomatoes and cucumbers too... Our garden is one of my favorite blessings that came out of 2020.
