Before I even left Japan, I received so many nice messages and comments welcoming me back to this beautiful city. It is unlike anywhere else and I am so humbled by your response.  This city has always looked after me, and no matter how short the notice is, I receive the same warm welcome. So I feel grateful to be here, especially during this time of uncertainty and change.  Being cocooned in Japan, as we all have been at home, made me realize just how small the world is, and how connected we all are to one another. To me it is important to realize this right now as there are many things that want to divide us or tear us apart. But that is the beauty of this industry. Hospitality, food, service -- it brings us together.  Which brings me to my visit. As bad as things have been for everyone, the disaster in Beirut really hit me. On one hand I wondered, “What I can do to help?” -- as a chef, being stuck at home -- but then I also realized, “I have to do what I can to help”.  The situation in Beirut has been on my mind for a few months now and I had been wanting to do a charity event for Beirut for a while. When my friends at Yashin Ocean House suggested we do something together, of course I agreed. So this Sunday, I will lead a very intimate in-person cooking session at Yashin Ocean House to teach you some fundamentals of Japanese cooking: how to grill steak, prepare dashi, and cook rice -- the Japanese way.  For those who can’t attend in person, we will stream the session via Zoom so you can join from anywhere in the world.  The profit from all of the tickets will go directly to Impact Lebanon, a UK-based non-profit that is actively raising funds to help those affected by the explosion.   I will be selling our Chateaubriand apparel and kitchen items as well, with all profits going to our farmers in Japan who are also struggling greatly.  So I hope you will join me and stay connected.
