A few weeks back, I did a private cooking class with the @verizonmedia team and taught them how to make one of my favorite curry dishes from my cookbook. We also had a chat about food, my inspiration, and quarantine cooking.

I first encountered this curry recipe when I stayed at a friend's house in Bali years ago. Over the years, I’ve made it my own. In my version, I call for a whole chicken, cut up. Cooking chicken on the bone gives the sauce such good flavor. I also think it looks better, seeing meat on the bone rather than little cubes of meat in a sauce. Serve it with white rice or bulgur wheat tossed with golden raisins or black currants. The mix of coconut milk and bulgur makes you feel like you’re doing something right for your body. This dish is delicious with lamb or shrimp, and you can leave out the meat to make it veg/vegan friendly!
