Our Banoffee Paella at @dominiqueansellondon, with flavors of a classic banoffee pie but built upside down in a paella pan so the bananas slowly caramelize at the bottom (with a splash of passion fruit juice to give them a bright floral fruity flavor). Then a layer of dulce de leche mousse, and salted cookie crumble crust on top (so it doesn’t get soggy). To serve, its inverted, then finished with freshly whipped cream. (📸 regram from @bunandbrie)
