This is not Black Star Pastry’s famous strawberry-and-watermelon cake — a.k.a. Australia’s most Instagrammed dessert. But it’s pretty close. This is our food critic @tejalxrao’s watermelon-rose trifle: just as delicious, but not as structured — meaning you can be a little messier! The recipe was inspired by @blackstarpastry’s cake, which was invented by the pastry chef Christopher Thé as a one-off for a friend’s wedding more than a decade ago.
