Our “Trimmings” dessert at @189bydominiqueansel. Like all our desserts on the dinner menu, it’s inspired by a kitchen technique and lessons that chefs learn early on in their training. For pastry chefs, we all have memories of snacking on leftover cake trimmings at the end of long days, and in this case, it’s soft devil’s food cake with salted peanut butter mousse and bergamot caramel.
