DUE TO POPULAR DEMAND!!!! ? INGREDIENTS (Serves 3/4):
2 x packs of Raw Prawns
3 x Chicken Stock (Gels are nicer)
4 Tbspn Fish Stock
6 Tbspns Soy Sauce
2 Red Onions (Thinly Chopped)
3 Garlic Cloves (or big squeeze of squeezy tube)
2 Red Chillies (more if you like spice!)
2 Red Peppers
1 Large Chunk of Fresh Ginger (peeled)
Fresh lemon grass (or from a tube!)
Green Vegetables e.g. Pak Choi / Sugar Snaps / Long Stem Broccoli
Pack of Baby Corn.
Rice Noodles (optional)
Fresh Coriander
1 x Lime. METHOD:
1. Slice up the onion and fry off in a hot Wok in olive oil. Add the chopped chillies & finely chopped Ginger for a couple of minutes.
2. Add the Fish Oil, Soy Sauce, lemongrass & Garlic.
3. Chuck in all the vegetables and stir on a low heat (harder ones like broccoli first, and keep the Pak Choi out to one side)
4. Meanwhile boil the kettle. Crush the stock cubes and add them to the vegetable mix. Add 6 cups of boiled water to the mix. Watch it all bubble and simmer with the flavours. (Taste now and add more soy / chilli as you like to taste)
5. Chuck in the final vegetables and the prawns.
6. Simmer & stir for a few minutes until the prawns go pink.
7. Serve immediately with fresh coriander and slices of lime on top.
