#cheesiemade Para Para Garlic Ebi Fried Rice.

One of the simplest dishes you can make yet also one of the most challenging.
Ingredients:
☆Warm cooked rice (short grain Japanese rice)
☆2 eggs
☆Negi (White leek and green spring onion!)
☆cabbage
☆shrimps
☆garlic
☆seasoning

Continuing from previous fried rice post, here’s the secret ingredient- ☆MAYONNAISE.
.
To get that airy, non-gluey, non-soggy fried rice, you pour mayonnaise on warm rice (so that it melts nicely) and mix well. It serves to coat each single grain of rice gently so they separate when you fry it. Works like magic! Who came up with this genius idea!?
Also, I like to use warm rice instead of cold rice because I always have problem seasoning cold rice evenly as they tend to be chunky in the wok.
I fried the garlic chips until golden, set aside, and then fried shrimps, set aside, white negi, egg, rice, cabbage and lastly add in green negi.

Don’t forget seasoning (I almost did today lol)! Also, I dunno how to do the cool wok-toss (not enough biceps lol) so I fry on medium instead of high heat and flip the rice gently and slowly until fragrant to cheat wok hei. Top with garlic chips and serve. My previous attempt was more successful though haha. .
