Kishin in Kyoto is all about breakfast. In fact, breakfast is the only meal served from when the doors open in the morning until well past noon. Breakfast begins with a true Kyoto dish, a simple and small serving of kumiage–yuba (bean curd skin) folded over shredded cabbage and topped with a dot of wasabi.
