Pomegranate, Mint & Feta salad ?
Side salad for 2
Calories 316 Per Serving
Ingredients
4 tbsp feta cheese, crumbled
4 tbsp pomegranate seeds
1 small handful pine nuts
½ bag of mixed salad leaves
1 tablespoon of extra virgin olive oil
¼ cucumber, sliced
6 mint leaves, finely sliced (optional)
Cooking Directions
Add the salad leaves, pomegranate seeds, cucumber and feta cheese to a bowl. Mix well.
Sprinkle the pine nuts and mint leaves over the salad.
Drizzle with extra virgin olive oil or balsamic glaze and serve.
