Idiazabal Croquettes, possibly the cheesiest deep fried bombs I ever had. The bread crumb coating is crisp and light while the idizabal, a form of unpasteurized sheep milk's cheese from the Basque Country, does not overpower the dish. Not to forget the chorizos which ratcheted up the smoky flavors by a few notches. So wicked! •
