a few left over cups of kuri squash from last nights dinner made their way into pancakes this morning - along with buttermilk, ginger, cinnamon and nutmeg - nutmeg is one of those truly beautiful ingredients seemingly plain on the outside but filled with stunning marbling once it's inside is revealed. I marvel it its pattern and color every time. its unlike any other flavor I know - equally at home in sweet and savory dishes - just a pinch goes along way but can be transformative - it worked especially well in these little pancakes - which still need a bit of development, the texture wasn't exactly what I would want it to be but I'll happily keep working on them - paired with Vermont maple syrup and a sprinkle of toasted walnuts they were elevating on this grey rainy Saturday and truly a first taste of autumn
And the huge old cupped I've been working on for the city cottage kitchen is finally finished - it's proving a lovely addition
