The smell of wood smoke was thick in the air at Mistura. Peruvians are known for cevicherias for sure, but they know there way around cooked meats over open flame. This pork was even better thank it looks here, the skin taking on an almost Chinese roast pork level crunchy skin. Outstanding. @robdnewton #FRTakeover
