So fulfilling to cut into a croissant and see a perfect crumb. It's always a challenge in the summers with the heat and humidity, but nothing beats the technique from a well-trained pair of hands. A croissant is an item that is never completed. Since opening, we've tweaked our recipe and levain at least 20x depending on the weather and variations in the wheat and dairy harvest.
