Italian food in Japan has evolved to something beyond what you find in Italy. It is Japanized in the best of ways in Hirata where the ambience, design and sensibility of silverware to dishes, pairings and overall palette sensation has found a balance between the plates' birth place to an elevated experience. So happy to see Hirata-san who I've known since her and her just deceased chef husband's original restaurant in Azabu Juban
