#PancakeDay. One of our favourite national holidays. It is a national holiday, right? We love our pancakes with lemon and sugar but if you are making them for a main course, serve with wilted spinach and gruyere cheese.
2 eggs
100g Plain flour
300g Milk
2 level tablespoons of sugar
A pinch of salt
40g butter plus extra for frying
Sift the flour into a bowl, add the flour and sugar and make a well in the middle
Drop the eggs into the well
Pour in the milk and whisk to form a batter
Warm the pan and melt the butter - add the melted butter into the batter
Melt the extra butter for frying and add in a ladle of batter (you want your pancakes to be thin)
Cook for a minute on both side - flip with confidence!
Serve with Lemon and sugar
