We do something very special in Tokyo, modeled after the same program in New York: we have Front-of-the-House staff and Back-of-the-House staff switch places to spend a day in each other's shoes. In many food establishments, often there is a divide between the kitchen team in the back and the service team in the front. But we believe a team supports each other ENTIRELY.
