Right around this time in Tokyo, our executive sous chef Shimo is stepping out to talk to our customers in line. Rain or shine, EVERY morning, one of our chefs (including myself when I am back in Japan) will go out to speak with our guests. It was important to me to get the cooks out of the kitchen once in a while to meet directly with the folks they are serving. That way we never forget why we do what we do. At the end of the day, it's for the people. Very proud of team Tokyo for keeping this tradition. #dabjapan #dabtokyo
