In Japan, people eat noodles or rice dishes at the end of a drinking party, after they enjoy many kinds of appetizers with their drinks. Those food are called "Shime" which means "done", and it's originally called the last food (しめの料理). People finish their drinking party as they eat Shime.

You could say it's one of the reason you can see many ramen places in downtown such as Roppongi, and that they are open until pretty late midnight.
