chocolat chaud with @アーペーセー olive oil chantilly (delish)

chocolat chaud:
500g whole milk
25g sugar
175g fruity bittersweet chocolate (65-75% cocoa)

a.p.c olive oil chantilly:
250g cold heavy whipping cream
10g sugar
10g @アーペーセー olive oil
pinch of salt

place sugar and milk in a medium sized pot and set over medium heat. while that warms, chop up the chocolate.
once the milk is steaming and about to simmer, remove it from the heat and pour in the chopped chocolate. allow chocolate to melt for a minute and then whisk mix to combine.
return the hot chocolate to the stove (set on low heat) and whisk for about 3-5 more minutes until thickened. **to get really thick hot chocolate** remove the hot chocolate from the heat, allowing to cool for about 15 minutes, then rewarm.

for the olive oil whipped cream:
place cold heavy whipping cream and sugar in a medium sized bowl. whip until stiff peaks pour in the olive oil and add a pinch of salt. using a soft spatula, fold in the olive oil you added until integrated.
