ANA.IC.MANZA.BEACH.RESORTさんのインスタグラム写真 - (ANA.IC.MANZA.BEACH.RESORTInstagram)「今夏、開業40周年のアニバーサリーをお祝いしたANAインターコンチネンタル万座ビーチリゾート。毎週木曜日は #TBT。40年にも渡る、万座の「今」と「昔」を皆さまにご紹介します✨ 開業当時から万座で働く和食調理の松山忠彦は、高校卒業後すぐ料理人となるべく修行を開始しました。修行先の静岡県から当時の師匠に連れられ、沖縄・恩納村へとやってきたのは21歳の頃。当リゾートの開業に伴う、和食レストランの立ち上げメンバーの一人として、新たな章が始まりました。その後、料理人として万座とともに歩み続けた松山は、最後には伝統ある「日本料理雲海」の料理長を務め、一昨年、定年を迎えています。「故郷の福島を離れて40年以上、気候も風土も違う沖縄の万座が私の人生そのものになっている」と話す松山の優しい笑顔には、料理人として、ホテリエとして、研鑽を重ねてきたことがうかがえます。定年後も万座への愛情と料理への情熱は衰えず、今も厨房に立ち、後進の育成に力を尽くしています。次回の #TBT もお楽しみに♡ Celebrating our 40th anniversary at ANA InterContinental Manza Beach Resort c on #TBT - join us to explore the "now" and "then" of Manza over the past 40 years✨. Tadahiko Matsuyama, a Japanese cuisine chef who has worked at Manza since its opening, began his training to become a chef right after graduating from high school. He was 21 years old when he left Shizuoka Prefecture, where he had trained, to Onna Village, Okinawa, accompanied by his mentor at the time. He started a new chapter as one of the opening members of a Japanese restaurant at our soon-to-be opening resort back then. Since then, Matsuyama has continued to work at Manza as a chef, concluding his career as head chef at the traditional Japanese restaurant Unkai, before he proudly retired from the position two years ago. "I have been away from my hometown in Fukushima for more than 40 years, and Manza in Okinawa, which has a different climate, has become my life itself," Matsuyama says with a gentle smile, which shows grace with dignity that he has continued to improve both as a chef and hotelier. Even after his retirement, his love for Manza and his passion for cooking have not waned, and he is still standing in the kitchen and working hard to train the next generation of chefs.
