Are organic fruits and vegetables richer in nutrients than their conventional cousins? The short answer is yes—but the long answer is more complex than you might expect. Regulations for organic food put out by the U.S. Department of Agriculture don’t focus on the health benefits. Instead, the emphasis is on how organic produce is grown, largely by protecting soil through the use of composts and animal manures and eschewing synthetic chemicals.
