Born in 1916 in Freetown, Virginia, a town founded by emancipated slaves, Edna Lewis grew up learning how to raise, harvest, forage, season, and cook fresh food alongside her family, which ultimately led her down the road to becoming a world-renowned chef in the 1940s. She opened Café Nicholson in New York City with business partner, John Nicholson, and served as the head chef. At this celebrity hotspot, she created some of her favorite and famous Southern dishes, including herbed chicken, biscuits, and soufflé. Lewis also created history-making cookbooks—"The Taste of Country Cooking" published in 1976 was one of her most popular and among the first nationally-recognized cookbooks by an African American woman. Her legacy lives on through her award-winning work, which continues to illustrate her Black heritage, Southern cultural traditions, and farm-to-table recipes.
