When the last big grocery store in Clay County shut down in 2018, people in the middle of the county couldn’t buy fresh produce or meat without driving at least 30 minutes, usually more. Some of the gas stations carry fruits and vegetables, but not high-quality stuff, and not much of it. Convenient, healthy food was not available. Kimberly Becher, a physician who runs a health clinic in Clay, noticed more of her patients were coming to her with high cholesterol, high blood pressure, and heart problems. She started long conversations about their diets, asking about their meals. What did you eat last night? Where did you go last time you shopped? She heard troubling responses. “Like somebody would just eat a can of beans every day,” Becher remembers. “Or they’d say, 'Well, I eat biscuits every morning and then I have a can of beans every night.' And I’d say, ‘Well, what about salad?’ And they’d be like, ‘Well, you know, if I get it, I have it for a couple days, and then I can’t afford to go back to the store for two weeks or a month.” The problem, Becher realized, is access. Limited access helps explain how, in a state with one of the highest food insecurity rates in the country, there was also, in 2019, the highest prevalence of adult obesity. Nearly 40 percent of adults in the state were obese, and nearly 23 percent of high school students were as well. Clay County’s numbers were slightly worse than the state average.
