At the same time, it is taking hundreds of thousands of Oaxaqueños, from rural areas and indigenous communities, to the United States in search of work. There is a saying in Mexico, "we are the people of maíz." Maíz is the center where Mexican identity, culture and cuisine converge.   There is a symbiotic relationship between the Mexican people and corn; they give it life and the corn returns the favor. It is not possible to separate corn from languages, customs, or life itself.
