We haven’t had jambalaya in forever so when I purchased Eckrich Smoked Sausage I had to make it! Their sausage fits well into my macros and I used low carb orzo instead of rice.⁠
⁠
Eckrich smoked sausage⁠
1/2 lbs sliced chicken⁠
1/2 lbs shrimp⁠
1 cup chopped celery⁠
1 cup chopped bell pepper⁠
1/2 cup chopped onions⁠
2 garlic cloves minced⁠
1 28 oz canned tomatoes⁠
2 Tbls Cajun seasoning⁠
1 package Low Carb Orzo⁠
⁠
Boil the orzo until al denté (almost cooked) and set aside. In a large deep pan, first simmer the smoked sausage until they’re brown. Remove the sausage, add olive oil and sauté the chicken. Remove the chicken and finish sauteing all the vegetables and cajun seasoning. Return the chicken, sausage and orzo to the pan and pour the canned tomatoes to simmer for 20 minutes, adjust the seasoning to your liking. Add the shrimp 10 minutes before serving, enjoy!⁠
