Looking to balance out Moët & Chandon's sharpness? Why not try a rich association with a savoury Breton shortbread and lime sorbet?
You will need: For the shortbread biscuits 150g flour / 120g salted butter, soft / 100g sugar / 3 egg yolks / 8g baking powder / 2 pinches of salt. Lime or lemon sorbet.
1/ Prepare the shortbread biscuits dough. Add the sugar, fleur de sel, flour and baking powder to a bowl. Cube the butter and work it into the mixture with your fingers. Add the egg yolks and mix it with your fingers.
2/ Spread the dough to 0,5 cm thickness between two sheets of baking paper, then let it rest for at least 1 hour. Preheat the oven to 180°C. Cut out rounds using a 6 cm cookie cutter, place them on a baking tray and bake in the oven for 10 minutes.
3/ Remove the biscuits and let them cool. Serve 1 biscuit alongside a scoop of lime sorbet and sprinkle the lime and lemon zest over the top.
