The newest additions to our Hong Kong pastry case at @dangwenlihk: * Summer BBQ Skewer: a skewer of tomato (actually made of made of mascarpone mousse and cherry tomato jam), grilled corn (made of white sesame whipped ganache with brown sugar crumble), and a mushroom (made of dark chocolate Chantilly with crunchy feuilletine and marshmallow), all on a chocolate bamboo skewer
* Winter Melon: a local favorite - chilled winter melon soup - has been turned into a mousse cake made of fragrant pandan crémeux, lemongrass mousse, and chocolate crispy puffed rice
* Durian: the local delicacy transformed into a cake with silky tofu mousse, red sugar ginger crémeux, and brown sugar ginger sablé (and surprise, it’s actually durian-free!)
