#Basico is anything but basic. The food is phenomenal, often veg or vegan, and served elegantly in a fancy expansive beach hut without any pretension. For your pleasure, the menu, across two nights, two tables, many drinks and several mosquitoes :
1/ Fried Plantain Tamal w Cotija Cheese, Green Tomato amd Quinoa stuffed Puff Corn Pastry; Oaxaca Cheese wrapped in Spinach, RedPepper Sauce and AVOCADO SALT; Lentils Terrine in Chaya leaf w Miso Demi glace and tanner mustard seed
2/ Broad Bean Ceviche w Cucumber, Green Tomato, Cilantro mixed and bathed w Lemon, Avocado Oil and Habnero Chilli Sauce; Basico #fishandchips w classic corn tempura fish, potato chips and BLACK MAYONNAISE
3/ Cabbage BBQ wrapped by Plantain Leaf and BBQSauce, white bean purée smoked tomato and leek
4/ Duck Salpicon w Duck Confit, Radish, Cucumber, Cabbage and Sour Orange on Corn Tortilla
5/ VEGAN MOLE w Mushroom and Huauzontle, tanned onion w Oregano and the freshest tortillas in the known universe
6/ Tuna Toast cubes w Soy and Ginger dressing and home made Avocado and ASH Mayonnaise
7/ Grilled Octopus ‘cooked’ at low temperature with Atichucha Sauce, Broad Been Puree, Grelot Onions and Sweet Potato
8/ CHOCOLATE Crumble w a semi long chocolate, creamy chocolate, cocoa nibs and dulche de Lecter ice cream
9/ Table 1wuth a view to the sand streets of Holbox
10/ Table 2, with Besser Brick wall @caitlinstutely
