For @anthonygiglio's family, "doing the jars" is an unshakeable summertime tradition. When Anthony was dating his now-wife Antonia, she invited him over for lunch to meet her parents, a highlight of which was Antonia’s mom Lucia’s eggplant, which was both sweet and savory; rich and ethereally light; moist and not at all watery; silky but not oily. The eggplant had been quickly pan-fried without egg or breadcrumbs, and between each layer was Lucia’s bright red, silky-chunky tomato sauce. Simply said, it was perfect. Anthony soon returned to come can tomatoes with the family, and the rest is history—twenty-two years later, Anthony, Antonia and their two teenagers are still “doing the jars” with their family each summer.
