Nextさんのインスタグラム動画 - (NextInstagram)「This week we’re back with @myfussyeater and her little helper for a yummy risotto recipe packed full of hidden veggies! - Ingredients - 1 onion, diced 2 garlic cloves, diced 200g cherry tomatoes 1/2 tbsp oil 300g risotto rice 900ml hot vegetable stock 2 carrots, grated 1 courgette, grated 1 tbsp butter 50g parmesan cheese - Directions - 1️⃣ Preheat the oven to 180c 2️⃣ Add the onion, garlic, tomatoes and oil to a large oven dish, stir and then bake for 10 minutes 3️⃣ Remove from the oven and mash the tomatoes with a fork! 4️⃣ Add in the risotto rice, stock and grated veggies and then return to the oven for another 25-30 minutes, stirring twice 5️⃣ Remove from the oven and add in the butter and parmesan cheese, mixing well. 6️⃣ Serve immediately with some salad leaves or green vegetables!
