This week @myfussyeater shares her take on healthier version of a takeaway favourite - chicken and chips! - Ingredients -
600g Baby Potatoes
1 tbsp Oil
500g Chicken Mini Fillets
75g Ground Almonds
1/2 tsp Oregano
1/2 tsp Paprika
2 Eggs
1 tbsp Oil
150g Frozen Peas - Directions -
1️⃣ Wash the potatoes but don’t peel (to keep the nutrients!) Cut into quarters, place on a large baking dish with the oil and shake well! Bake in the oven at 200c for about 20 minutes.
2️⃣ Time for the goujons! Add the ground almond, oregano and paprika to a bowl and mix well.
3️⃣ In another bowl crack in the eggs and lightly beat with a fork.
4️⃣ Take one of the mini fillets, dip in the egg and coat in the almond mixture. Repeat with all the mini fillets.
5️⃣ Heat the oil in a frying pan on a medium heat and cook the mini fillets for about 5 minutes on either side.
6️⃣ Cook the peas on the hob or in the microwave and serve up with your wedges!
