I want to share with you a history of sushi rolls here in the US.
Hidekazu Tojo invented the “inside-out” sushi roll so called California roll over 50 years ago in Canada. The roll’s name came from the place where the new sushi was quite popular.
Why he made it inside-out? It’s said that people at the time simply couldn’t accept the black paper “Nori / Seaweed” as food, (it used to be an Ewww food😝) so he hid it inside for them to eat easily.
In Japan, Nori is normally outside, and we barely eat California roll type of sushi rolls. For Japanese people, it looks bit wired and unfamiliar even today 🤷‍♀️ Do you have a favorite roll? I love Philadelphia roll😍
