As a rem​inder to support your local restaurants during these tough times, we published an interview with Swedish superstar chef Marcus Samuelsson a while back, made in our HOPE store after a HOPE talk between Marcus and our CEO Kerem Yazgan.⁠⠀

As a young chef, Marcus left Europe for New York after being told that the world wasn’t ready for a black chef to run a kitchen. He settled down in New York where he managed to turn his own unique perspective and experiences, a Swede of Ethiopian decent, into an advantage.⁠⠀

Although it also meant he had to be twice as good and work twice as hard as his white colleagues. It’s pretty much the same for women, LGBTQ people and anyone who’s considered different. You still have to work so much harder than white, straight cis men.⁠⠀

Marcus did well in New York and after a few years at Michelin star restaurant Aquavit, he got tired of cooking for the one percent. He quit and moved on to start his own restaurant, The Red Rooster, in Harlem where he currently also lives with his wife and son. One restaurant became two and then a few more. Now, he’s running his very own food empire - cookbooks and podcast included.⁠⠀

Along the way, he has developed what he calls a “spiritual compass”. A holistic approach when it comes to food. This means thinking about where your food comes from. Are the vegetables organic and how were the animals treated? Work with the seasons in mind and think about the leftovers – they can often be turned into something else? A new dish? or a broth?⁠⠀

He has also made sure to create diverse working spaces, offering an alternative to the traditional restaurant kitchen. And as long as you have the interest, passion and are willing to work hard, you’re a potentially fantastic chef.⁠⠀

His heritage is important for him and a big source of inspiration, together with art and music. It’s all about expression and bringing people together.⁠⠀
Food builds bridges between people instead of walls. It’s magical in that way. New food comes to us through immigration or travel and it gives us new contexts and shows us how big the world really is.⁠⠀
