Mary McCartney’s Homemade Granola ————————————— Prep time: 10 minutes

Ingredients

4 cups / 360g Rolled Oats
1 Cup / 150g Raw Pumpkin Seeds or Raw Seeds of your choice
1 Cup / 150g Raw Brazil Nuts or Raw Nuts of your choice
1 Teaspoon of Ground Cinnamon
3 Tablespoons of Vegetable Oil
7 Tablespoons of Maple Syrup, Runny Honey or Golden Syrup
Method · Preheat your over to 160C / 320F. · Place greaseproof paper on your baking trays if using. · Put the oats into a bowl and add the pumpkin seeds. · Place the Brazil nuts onto a chopping board, and chop until you have the your preferred consistency, and then add to the bowl. · Sprinkle the ground cinnamon into the bowl and mix well to combine. · Take a small saucepan, and on a medium heat add the vegetable oil and the sweetener of choice and keep stirring until well combined. · Pour the syrup over the dry ingredients and stir until the mixture is well coated, then transfer to the two baking trays. · Evenly spread the granola out, and place in the oven for ten minutes. · After ten minutes, take the granola out and stir so that it cooks evenly, place back in the oven to cook for another ten minutes. · Take the granola out and repeat the previous step. · Finally take the granola out, it will crisp up more as it cools, once cooled store in an airtight container. Serve with milk or yoghurt of your choice.
