Yesterday’s healthy version of “fried rice” was sooooo good!
I basically took the veggies I had leftover with some frozen cauliflower rice and threw everything together. You can have fun with this recipe and make it to your liking - adding some red pepper/chili for spice and more protein/veggies for heartiness.
What I used:
Bag of frozen cauliflower rice (let it defrost for 30 mins at room temp before using)
Half a yellow pepper
Half a zucchini
3 scallions
1/2 shallot
Handful of carrots
2 eggs
4 tbsp of soy sauce
2 tbsp of sesame oil
2 tbsp of sesame seeds

Heat up oil, chop shallots and sauté. Add veggies and cook for a few mins (recommendation add the veggies that need to cook longer first). Add cauliflower rice and cook till heated thoroughly and there’s no residual water (approx 3-4 mins). Then crack two eggs in the middle, let it cook and fold in rice. Finish with soy sauce, salt/pepper to taste and top off with sesame seeds. #skatermeals #quarantineeats
