Made this banana bread today and it was so delicious! 😍 It almost taste like a dessert but it is gluten free, dairy free and refined sugar free! 🍌 Thought I could share the recipe if you would like to try it 👇🏻
Ingredients:
1 cup organic gluten free oats (mixed as flour)
1 cup almond flour
2 bananas (over ripe)
3 organic eggs
1/4 cup chia seeds
1 tsp bicarbonate
1 tsp cinnamon
1 tsp Himalayan salt
1 tsp natural organic vanilla
1/4 cup oatmilk
1/4 cup coconut oil
2 tbsp honey
2 tbsp lemon juice (to activate the bicarbonate)
3 fresh dates
2 tbsp mixed nuts
1. Preheat the oven to 175°C (fan forced)
2. Line your tin with baking paper
3. Mix all the dry ingredients first and then add the rest except the dates and nuts
4. Chop the dates and mixed nuts and add it to the finished mix, just mix it in with a spoon. (If you prefer something else like any other dried fruit or berries it works great as well).
5. Put the mix in the baking tin and add some banana slices and chopped nuts as topping
6. Time to put it in the oven for 50 min (175°C), when it is finished turn the oven off but leave the banana bread in there to rest for 10 min
