To celebrate #WorldVeganDay I have created a creamy vegan pesto recipe to show just how simple and easy vegan cooking can be 🌿

Serves 2
* 2 cups Basil (50g)
* 1/2 cup Pine Nuts (70g)
* 2 tbsp Nutritional Yeast
* 2 tbsp Olive Oil
* 2 tbsp Water * Pinch Salt and Pepper
* 2 cloves Garlic, peeled
* 1/2 Lemon, juice only
* 180g Pasta (I like to use brown rice fusilli)
* Large handful Vine Tomatoes, roasted * Fresh Basil, to garnish
1. Add all pesto ingredients to a food processor and blend until desired pesto consistency. You can lightly toast the pine nuts in a dry frying pan to add a depth of flavour, but this is optional. 
2. Stir the pesto into the cooked pasta and stir in the roasted tomatoes.
3. Serve in bowls and garnish with some fresh basil. 🍃
