evelynsias The video you made with Sarah was so helpful and I referenced it frequently when I started my sourdough journey back in May. I have been using the same recipe with one minor change. My dough was wetter than what you see in the video so I reached out on the video comments and the response was that Sarah is using an artisinal flour which absorbs more water. So understanding that whole wheat absorbs more water I upped the whole wheat by 10 grams and decreased the bread flour by the same amount (I use King Arthur organic whole wheat and bread flour) That subtle change made a difference.I also purchased her book because it includes ways to use discarded starter as well as lots of great information.
