3 grains porridge bread turned super nice this week. It always amazes me how well it preserves. The crumb gets creamy from oats, but there are also bites of barley and amaranth which gives nice texture. Amaranth gets sprinkled on crust, so it stays crunchy even on day four. It’s mild,
malty and nutty. Really love this loaf.
