This lusciously cheesy artichoke pasta was born out of editor @you_feta_believe_it's craving for her favorite midnight snack: the signature slice from @artichokepizza. 🤤 Recently, Erin was struck with a hankering for doughy crust, gooey cheese, and spinach-and-artichoke-y goodness, but was thwarted by a late winter snow storm rendering a 30 minute commute out of the question. What was our heroine to do? Why, turn all those flavors she desired into a baked pasta, of course! 🙌 With a rich cheese sauce, onion and garlic, handfuls of artichoke hearts, and a crust of buttery focaccia chunks(!!), you'd be hard pressed to find a more rewarding snack-turned-dinner experience.
