Our new Grapefruit Panna Cotta, with fresh honey and thyme-poached grapefruit supremes, silky grapefruit panna cotta, and bamboo honey gelée. Bamboo honey comes from a type of Japanese knotweed plant (and doesn’t actually come from bamboo), and it has a beautifully deep, almost molasses-like color and more depth and roundness in flavor than regular honey. One of my favorite new pastries in Soho, starting today.
