I asked Chef @jennertomaska to show me one of his most eye catching dishes and this is what he made...?❤️ I died then came back to life....it’s beautiful and looked like pure lace fabric.. think Lace Meat Jello!
Chef says:
Chaudfroid is a old French (I love French food) technique that encased a piece of meat in a white sauce(served cold, think meat jello). It was typically decorated with a inlay of herbs, ect... to look like a flower or pattern.
I’ve found inspiration for a couple dishes over the years through fabric/clothing. The “lace” Chaudfroid is draped over the bird and dish and meant to mimic the plate.
