Is it harmful chemical? Here’s where I want you to see it in a whole new light: AJI-NO-MOTO is a pure umami seasoning that is made from natural raw materials like tapioca or sugar cane through fermentation process. The main component is glutamate with sodium- hence MonoSodium Glutamate - MSG. . We all know sodium. But what is glutamate? Is that THE culprit? ?It is impossible to avoid glutamate in your life and you know why? Because it occurs in natural food such as tomato, meat, and *gasp* - breast milk. Yes, we are actually feeding our babies glutamate since the day they were born. . Claims about MSG causes hair loss, migraine, or thirst are all unfounded with no scientific evidence. (Thirst is caused by consuming too much sodium - and AJI-NO-MOTO has only 1/3 the amount of sodium compared to salt!!) . So, do I use AJI-NO-MOTO in my home cooking? YES. A small amount of it brings out the flavor of the food, I especially love to use it on fried rice, soup and stir-fry vegetables. I also think it’s a great way to encourage kids to eat more vegetables because with just a sprinkle of umami magic, vegetables now taste better than ever! . And did you know? Since AJI-NO-MOTO only contains 12% of sodium whereas salt contains 40%, adding a dash of it in your cooking can actually reduce your daily salt intake while enhancing the flavor of your food. Now that’s some game-changing health benefit. Shocking, isn’t it? .
