Each dessert at @189bydominiqueansel is inspired by kitchen lessons and techniques that chefs learn early on in their careers. This one is called “Trimmings”, a nod to every pastry chef’s favorite, cake trimmings, and not letting those little bites go to waste. Ours are made with devil’s food cake, salted peanut butter mousse, bergamot caramel, and almond feuilletine, and come with a little pastry brush so you can brush the cakes with rum syrup and give them a little dusting of cocoa powder to finish.
