For our monthly Artist’s Palate project, we invite a leading artist to share their favourite dish, which we construct and photograph. Argentine conceptual artist Leandro Erlich specialises in interactive installations, such as his famed swimming pool that seemingly allows visitors to walk underwater. Similarly, his asado (the quintessentially Argentine barbecue), in our January issue has a participatory element. Spearheaded by his collaborator Raùl, it requires a play on perspective, a roaring fire, and a string of barbecued sausages topped with a crisp chimichurri sauce.
