Did you know that there's actually no such dish as "spaghetti alla bolognese"? To put it better, spaghetti alla bolognese is NOT what everybody (mostly outside Italy, but not necessarily) thinks it is. The real spaghetti alla bolognese, it turns out, is made with a tomato, onion and TUNA sauce! This has just recently been confirmed by the Italian academy of cookery. I read this first on @tomfonta's beautiful new food blog, Soffritto. For quite a long time now, @tomfonta has spent a part of his weekend in writing the menu of all dishes he would be cooking during week to come. He searches for recipes online, he digs into some classic Italian dishes — mostly from his Florentine home, and he lets the food of the world in busy New York City inspired him. He makes sure each week's menù is nutritiously substantial, always includes at least one pasta dish, there is one dish with meat/fish, and the rest is often vegetarian. Earlier this year Tommaso started sharing his weekly menu via a small newsletter with friends and family. That's how #SoffrittoMenu was born. He would also write the history of a particular dish in the menu, or a note on a specific ingredient; he was practically already food blogging, without having an actual blog. Now that blog is finally on the internet and it's soffrittomenu.com. What I love about Soffritto is that unlike most food blogs run by "professional foodies" (which I know very well I am part of), is really, TRULY about home cooking. There's no editorial plan, it's what Tommaso has always done and now he's just sharing the dishes he actually cooks during a week. 7 dishes, cooked mostly for dinner, in double portions to take to work for lunch the next day. In his own words Soffritto is "a hope that more people will explore cooking at home and consider food not as something you buy, but something you make". I can't wait to see what other culinary adventures @tomfonta will take on (the man mills his own ancient grains to bake sourdough, IYKWIM).
