I have been thinking about luxuries lately. About abundance, and waste. I, like all of you here, am too young to remember what it was like when we as human beings of the developed world didn’t feel entitled to have whatever we wanted, whenever we wanted it. Food wise, until quite recently (60-70 years, depending on where you’re from), we would consume certain ingredients only for special occasions. These were usually the animal product and our consume was related to the time of the growth of the animal. Meanwhile, unless you've been living in cave in the past couple of years, you must have heard about countless researches on how intensive farming, particularly industrial cattle raise and dairy farming is having a terrible impact on the environment. So we can recycle our domestic garbage, use ecological detergents and bike everywhere, but as long as we are consumers of the products of industrial farming (meat, poultry, dairy and all the processed food that uses these as ingredient), we are hugely involved in destroying our planet. There are many ways we can reduce our environmental impact, but nothing sends as big a message as our food choices. Remember that every time we're shopping in the super market, we're actually at a voting ballot. Our choices determine what should stay and what should go. Let's treat meat and dairy as the luxuries they once were. Consume less often, but invest in good quality, organic, local products. Support your local farmers, not because it's cool, but because our future depends on it. Personally, after 3 years of having drastically cut meat and poultry, I have been eating more meat in the last month, which I will now cut back again. I have the immense fortune of having an organic butcher shop in front of my house where I buy the meat for my cooking classes. My new resolution is to stop buying industrial cheese from supermarkets. Maybe I should start making my own yoghurt since as a true Iranian, I can't live without. #LabNoonFood
